Smashed Eggs

Such a super easy, quick breakfast to whip up in the morning, literally takes 5 mins (including eating time if you’re a bit faster than me).

2 eggs
Pinch each of chilli flakes, salt, pepper
1 rasher of bacon, chopped up
1 spring onion, sliced
1/4 avocado
Cheese of your choice – pecorino, fetta etc

Crack the two eggs into a cup. Add the chilli, salt and pepper and beat with a fork until combined.
In a small saucepan heat some coconut oil or butter to lightly coat the pan and add in the spring onions and bacon. Fry until bacon is crispy. Add in the egg mixture and continue to gently everything together until the egg is ALMOST cooked. This is the big secret I’ve been passed on for good scrambled/smashed eggs – they will continue to cook as you serve so cook to that point just before their ready then take of the heat and let sit until you’re ready to serve.
Serve topped with avocado and a sprinkling of cheese – YUM!
