Raw Winter Salad

This is a perfect example of something I might throw together for a weekday lunch or dinner to use up whatever is in the fridge. One of the best kitchen products I have ever used is a Japanese mandoline slicer (Check out this one) … buy one of these and I promise you will never be bored by salads ever again in your life! If you don’t have one, just slice your veggies how you like them. This recipe really doesn’t have measurements because I just slice up as much as I think I’ll need – often how I cook! If your eyes are bigger than your stomach it keeps really well in the fridge.

Shredded white & purple cabbage
Spring onion
Pumpkin seeds
Sesame seeds
Chopped almonds

1 tbsp plain yoghurt
Drizzle of olive oil
Drizzle of apple cider vinegar
1 tsp Dijon mustard
Pinch of salt
Pinch of chilli flakes
