So moving to London is an absolute treat for a healthy foodie . . . amazing neighbourhoods to wander around, beautiful farmers markets to peruse and of course amazing cafes and restaurants . . . but with the conversion rate at the moment the Aussie dollar isn’t exactly in our favour when we get our swap on with the pound. This gives me a great reason to get my cook on at home, try new things and experiment with recipes on my ever-patient and willing boyfriend. They say the way to a man’s heart is through his stomach . . . so welcome to date night eats.

I picked up these delicious peaches and apples at the local Wholefoods market when I was wandering home on a rainy arvo . . . picturing them with a bit of crunch and some tart yoghurt – this cheats crumble was born.


2 peaches
1-2 green apples
Melted coconut oil
Cinnamon
1-2 cups crunchy nut granola or any granola of your choice – try to choose one low in sugar as you’re already getting a whole lot of sweetness from the peaches and apples.


Pre-heat oven to 180°c. Dice the peaches and apple and put in a small oven dish (about 12x8cm). Drizzle with coconut oil, add a sprinkling of cinnamon and top with granola.

Place in the oven and bake for approximately 20 minutes, until peaches & apples are soft and heated through. If your granola starts to brown too much, place some foil over the top of the dish – I don’t mind the browned bits on top, they add a bit of a caramelised flavour.
Serve hot out of the oven, topped with yoghurt and fresh berries.
Super delicious as left overs for breakfast too! Yum, enjoy x
