Avocado hummus 

When you thought hummus couldn’t get any better . . . . along came avo!!

It’s my two favourite things combined into one flavour bomb that I literally put on everything! Get excited . . .

2 x 400g tins of chickpeas – drained and rinsed well

2 x avocados

3 x garlic cloves

1 x chilli – chopped (only if you like a bit of heat, otherwise leave out)

2 tbsp tahini

6 tbsp olive oil + extra for storing

juice of 2 x lemons (I just squeeze these straight in, I don’t bother properly juicing them)

1 tbsp cumin

pinch of sea salt



Ok prepare yourself . . . this is a tricky one . . . put everything in a food processor and blend! If you want a smoother consistency add more olive oil as it is blending until you reach the consistency you like.

Store in glass jars in the fridge and top with olive oil to preserve the moisture of the hummus. I put it on everything – salads, pasta, sandwiches, with cheese . . . here I have put it on rice crackers with various toppings including seeds, tomatoes, feta, and homemade pickled red onion. Enjoy x
